Allow iTunes to do on-the-fly transcoding during syncs.
According to rumors this might be fixed in iTunes 9.1 which is due for release until next Saturday (also according to rumors)

I don't understand why this doesn't gain much more popularity. I know a lot of persons who have HUGE and I mean HUGE CD album collections. They have of course ripped all that stuff into Apple Lossless because they don't wanna settle with less quality than on the CD.
However when it comes to iPods especially the flash memory based ones, like the iPhone, the amount of albums you can put on them is tiny.
This option would allow to automatically transcode songs to MP3 or AAC while syncing to the iPod of your choice without any headaches. It's a very important feature in my opinion. It would allow you to store 10 times more stuff that way.
Right now I have 24 albums on my iPhone. I could then have 240 albums. WOW.
Please vote this up. This is a very important feature for a lot of people.
iTunes can't auto-scan folders for new or missing media
This has been fixed in iTunes 9.0 kinda. iTunes now features a new folder in the Media Library Folder structure called "Automatically Add to iTunes".
Anything in that folder will be added to iTunes in background while running and deleted from that folder. Or on startup if iTunes didn't run while files got added to it.

I think this is technically quite difficult to implement and will not see the day of light until OS X gets a completely new filesystem like ZFS.
Consistent background color during boot, logon, user switching
The reason the color changes is that the first blue color is shown while ColorSync isn't running, then it starts up and changes your display color, so the blue looks differently.
I actually like this, because it help when debugging computers that start up very slowly. You can tell if the problem is before or after ColorSync, and therefore in the core system or in a part where the user might have done something.
I still voted + on it because Apple used to be pioneers in terms of UI and design and have more and more lost track of that lately. This is definitely something that should be refined, even when it's a small issue.
Delete app related files/settings when dragging apps to the trash
Each programm should include a list of files it will add to the system in it's manifest file inside the .app. The finder should just read this manifest and optionally delete all those files listed there.
Easy solution. Big impact.

Yes this is fixed in 9.1 - even if a bit more configurability would be nice :)
