iChat AV can't video-chat between Mac and Windows computers
1. Apple will not release iChat for Windows.
2. There WILL be a new version of Mac Messenger, after the current version, that will support video chat. For now, we can only wait.
Just like i waited 4 years for Microsoft to make POP3 access free in Hotmail, and it finally is here.
Improve the UI for multiple monitors
This is good, but some solutions are sort of not-good for certain situations:

New users getting confused between docks
Dialog windows lack keyboard shortcuts and tabbing (by default)
CS4 for Mac is coming up. Adobe suspended the release for some reason, I think it has something to do with snow leopard not having Carbon and using 100% cocoa> Anyway, finder is going to be cocoa too! and so is CS4!! hopefully this means no more not-windows, not-mac, not-java-ish dialog boxes!
Merge folders option when copying/moving
This isn't a function, but the core behavior of Mac OS X. I did some googling after finding out the hard way after switching from windows that "replacing" a folder chock-full of pictures of a vacation made them all go bye-bye. You'll notice that almost ALL items in your Mac filesystem that are created by or related to apple, be it folders, apps, plugins, extensions, packages, iWork docs, etc. all have a "show package contents", which allows you to, for instance, look through an app's files without opening it. Essentially, they are folders that perform a non-standard function when opened (folders that run, but don't open). On the other hand, identical items not apple-related, such as Word Documents, Music files, Image files, and files from non-apple programs don't have this option. This is because all their contents are encoded in non-apple forms. So this means even if i don't have an app like aperture, i can still open an aperture library, which is a folder. So what does this mean? In unix (the very core of mac os x) anything is a file. A folder is a file. A file is also a file. A folder just so happens to be able to be opened with finder. OK, this doesn't make much sense, but I got the general idea.
Solution? I don't know, rewrite OS X? implement a high-level process that hijacks a copy operation, merges the files, then deletes the original without user intervention? blah.
Delete app related files/settings when dragging apps to the trash
I think "Applications".prefpane, with a list of all applications should be made. It would be located in system prefs, and clicking "remove" would erase apps and all related plugins and content. Additionally, there should be an option to keep certain files of a deleted app, for example delete the context menu item but keep the app settings. A tab with all orpahaned (app deleted but prefs remain" section would be there too in case users change their mind and decide to delete the orphaned prefs.
Finder: Queued file copy/move operations

I have a 7200 ROM drive - this is an issue with Mac OS and not my drive. I've had copies gone from minutes, to tens of minutes, and then back because of multiple copies going on.
