You can do this by using the 'spotlight comments' of the file - not whilst you're saving or downloading though; you have to do this in the File Information (cmd-i) window.

Allow iTunes to do on-the-fly transcoding during syncs.
I actually think you should be able to transcode from whatever format you have your music stored in, into whatever format you'd like your music on your iPhone/iPod as - and you should be able to choose those transcoding options on a per-device basis.
It's already built into iTunes - but you can only do it for iPod Shuffles.

But still, I'm not sure what the confusion's about. Later than/Greater than, Earlier than/Less than - the meaning is analogous.

I must admit I haven't - I've used Outlook 2007 on the PC, which has a similar idea:
The message window has a sort-of-tabs interface, which allows you to switch between the message body and a preview of each individual attachment.
I think if the tabs were within the message body, that'd work well - I'll have to give TB3 a look; even though I don't actually use a traditional mail application anymore (my iPhone and Offline GMail access have made it a non-necessity).

I can understand a tabbed view within the message pane for preview purposes, but not on the whole application view - that would be a little confusing.
This is one area where I don't think tabs would work as well as having individual windows open for the attachments.

Finder: Connect to Server/UI Improvement
Try that in every other textbox and see what happens: you either get nothing, or you get an auto-complete interface. I'd say that'd be a better idea than a non-intuitive skip to another element completely.
Spotlight Feature request: Google and URL launcher
Not sure I'd like that as a default behaviour - plugins would be a good idea, giving the end-user control over what happened with spotlight. Alternatively, though, you could just install Google Desktop.
