Maximum window size with one button(like windows)
Wait wait no no no.
The strength of Mac OS is it's multi window interface. To make the + button maximize until it fills the screen wastes too much screen space to be useful. The problem with Photoshop and iTunes is that they are inconsistent with what the + is supposed to be, no that they don't do it the Windows way.
List the apps that prevents unmounting

I agree 100%, but the good news is there is a free donationware utility that can find the processes that are causing the problem and kill them called What's Keeping Me?:
